I’ve seen this quote a bunch of time last Valentines, what does it mean when people say “the opposite of love is indifference”?

The full quote goes like this, “The opposite of love is not hate, it’s indifference. The opposite of art is not ugliness, it’s indifference. The opposite of faith is not heresy, it’s indifference. And the opposite of life is not death, it’s indifference.” – Elie Wiesel, in U.S. News and World Report 27 October 1986
Studies show that love and hate have a similarity in terms of where they happen in the brain, so they’re more similar than opposite in that case.
If you’re indifferent, your brain will have no to minimal reaction, and that’s farther than love is to hate.
“Indifference” is defined as the “lack of interest, concern, or sympathy.”
If you’re hating on something or someone, you still care enough about them to spend time hating – and care equals love.
So to not love someone is to not care about them completely – a.k.a be indifferent.
That’s how I interpret that quote.
