My friend, who’s an international student, just called pancakes “flapjacks.” Is it just the name, or are “flapjacks” different? What’s the difference between flapjacks and pancakes?

Depends on where you are – In the US and Canada, you can use flapjacks and pancakes interchangeably, but in the UK they’re totally different food.
“Flapjacks” in the UK refer to a bar made of oats, similar to a granola bar and not a flat batter like pancakes.
