We suspect a coyote had entered our property and did some damage to our garden, but we’re not sure. We do have a fence. Can a coyote jump over fences? How high can they jump?

Just leaping, about three feet in the air. But they can pretty much climb any fence as long as their back limbs can step on something to prop them up and climb.
To be sure, you can install some roller bars at the top of your fence. Roller bars prevent the coyotes from leveraging themselves up and over the fence because they can’t get a steady footing.
