They’re quite different, actually.
Hard Salami
Made from pork, can be a mix of beef and pork
Seasoned with garlic and ground pepper
Smoked
Darker in color (compared to Genoa Salami)
Doesn’t need to be refrigerated, lasts longer than Genoa Salami
Genoa Salami
Made from pork
Seasoned with garlic, peppercorns (whole or cracked), dry Italian red wine (optional)
Cured, not smoked
Lighter in color (compared to Hard Salami)
Needs to be refrigerated, doesn’t last as long as Hard Salami
