Yes, you can definitely eat zucchini raw. In fact, it’s healthier that way because the cooking process lessens the vitamin A and vitamin C that are in the raw zucchini.
The only reason we usually don’t eat it raw is that raw zucchini can be really bitter. It usually tastes mild with hints of sweetness and bitterness, but you can get extremely bitter ones that can ruin your dish. There are actually plenty of dishes that use raw zucchini such as Raw Zucchini Salads and Zucchini Noodle dishes.
